Bananas + Eggs = Pancakes!

Since my last post, I’ve been doing quite a lot of experimenting in the kitchen. One of my favorite food creations was a super delicious and easy pancake recipe!

All you need are 2 ingredients: 1 ripe banana and 2 eggs. Mash the banana and whisk in the 2 eggs. Add cinnamon, vanilla, pumpkin pie spice; whatever is in your cabinet and appeals to your taste buds! Pour the batter onto a greased pan over low heat, wait a couple minutes, flip, and bam! Pancakes!

Cover your pancakes with fruit, almond butter, or whatever topping you want.  I put peaches and blueberries on mine and it was amazing.  These pancakes are so easy and tasty and perfect for those of you who are gluten free. They also taste just like normal pancakes. Go try it out for yourself!
