Kale and Mushroom Tacos

Why do I love tacos? Because I’m lazy. Tacos are the perfect lazy person food. All you need is a couple of ingredients, some taco shells, and you’re good to go!These tacos are made with four ingredients only: kale, mushrooms, white beans, and feta cheese (optional). Mushrooms imitate a meaty texture, white beans provide protein, and kale packs a punch of vitamins K, C, and A, along with magnesium and iron.

I buy all of these ingredients at Trader Joe’s, especially the corn and wheat tortillas. I don’t like rubbery corn tortillas, so these are the perfect texture because of the added wheat flour.

ingredients

  • 1 container of Trader Joe’s baby bella mushrooms
  • 1 package of Trader Joe’s lacinato kale
  • 1 package of Trader Joe’s corn & wheat tortillas
  • 1 can white beans
  • Feta cheese

For the Kale

  • 2 tbs olive oil
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 1 tsp salt

For the Mushrooms

  • 2 tbs olive oil
  • 1/4 cup low sodium soy sauce
  • 2 tbs minced garlic

directions

  • Preheat the oven to 375 degrees. Follow the instructions for my smoky roasted kale recipe.
  • In a pan over medium heat, heat up the olive oil for the mushrooms.
  • Add the garlic and cook until light brown.
  • Add the mushrooms and soy sauce and let simmer until tender, about 10-15 minutes.
  • Drain and rinse the beans.
  • If desired, lightly warm the taco shells over a gas burner, if you have one, or in a pan on the stove.
  • Assemble the tacos with the kale, mushrooms, beans, and a sprinkle of feta if desired.
