Mexican Breakfast Plate

One of the best parts of being home for the summer is being able to cook and know EXACTLY what’s going into my meals!

This morning I just put together a quick version of the Mexican breakfast plate. Two eggs, half an avocado, some chopped tomatoes, and low fat mozzarella sprinkled over the top makes a great start to the morning. Pair it with some strawberries on the side to make a delicious breakfast that anyone would love!
