Snickerdoodle Bites

I honestly think I ate half the dough in the process of making these bites.

I did NOT expect them to be this addicting. At first I was planning on making these balls and labeling them as Coconut Almond Bites, but as soon as I added cinnamon the dough immediately tasted like snickerdoodles. Little bites that taste like cookies? Works for me.

I’ve been needing a healthy snack that’ll keep me going through my after-work workouts until I get home at around 7:30. These bites are energy-packed and have the additional element of protein powder and healthy fat that keeps me sustained until dinner. Plus, they only take about 15 minutes to whip together and are cheaper than buying entire boxes of energy bars.

ingredients

  • 1 10oz. container of pitted dates
  • 1 scoop vanilla protein powder (Life’s Abundance is my favorite brand)
  • 1 tbs cinnamon (I like a lot of cinnamon, but feel free to reduce it’s too much for you)
  • 1 tbs almond butter
  • Unsweetened, shredded coconut

directions

  • Soak the dates in warm water for 15 minutes in order to soften them and make them easier to blend/process.
  • Remove the dates from the water and using a food processor or high-speed blender, blend the dates until smooth. You may have to stop and scrape down the sides to make sure everything is smooth and consistent, but not too runny. Add a little bit of water if it helps to blend.
  • Add the almond butter, protein powder, and cinnamon then blend.
  • When everything is combined, put the dough in the refrigerator for about 30 minutes or freezer for about 10 minutes. This will make it easier to roll the dough.
  • When the dough is firm, roll it into small balls, it should make about 10-12 depending on how big you make them.
  • Roll the bites in the shredded coconut.
  • Store the bites in the refrigerator for a week or in the freezer for a couple months.
