Pumpkin Pie Chia Pudding

So I opened a jar of pumpkin puree a week ago and have been trying to use it all up, hence the crazy amount of pumpkin flavored recipes. Hopefully this will be the last one for a little while….

This chia seed pudding is amazing and tastes just like a pumpkin pie, but healthy.  I had it for breakfast because chia seeds are amazing sources of fiber and protein, both perfect to start my morning off right.  Of course, you can have it for dessert/lunch/dinner/snack and modify it how you like.

Ingredients

  •  1/2 cup of almond milk
  • 2 tbs pumpkin pie puree
  • 2 tbs chia seeds
  • 2 tsp cinnamon
  • Pumpkin pie spice
  • 1 tsp maple syrup or honey to sweeten (optional…I didn’t use any, but depending on how sweet you want it, use as much or as little as you like).

Directions

  • Combine the pumpkin puree, almond milk, sweetener, and spice in a bowl or mug until thoroughly combined. To speed things up, use a blender.
  • Pour in the chia seeds and mix well.
  • Let the mixture sit refrigerate overnight.  If you want it sooner, then a couple hours will suffice.
  • Top with fruit, granola, or toppings of choice.
