Vegan Oatmeal Raisin Cookies

 If I had it my way, I would recipe test cookies all day. Especially vegan ones because you can eat all the dough (guilty as charged). This weekend, I procrastinated my homework by making some healthy oatmeal raisin cookies because I had been craving them FOREVER. I used my usual vegan cookie recipe and tweaked it a little, but it’s still full of whole grains, natural sweetener, and healthy fat. Try not to eat them all at once.

Ingredients

  • 2/3 plus 1/2 cup spelt flour
  • 1/3 plus 1/4 cup oat flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup raisins
  • 1 1/2 tsp cinnamon
  • 4 tbs maple syrup or honey
  • 6 tbs almond milk or milk of choice
  • 2 tbs coconut oil
  • 1 tsp vanilla

Directions

  • Preheat the oven to 375 degrees.
  • Mix together the dry ingredients.
  • Add in the wet ingredients and stir well, adding more almond milk if it’s too dry.
  • Roll together small balls and flatten on a cookie sheet.
  • Bake for 9 minutes.
  • Eat them all.
