Tropical Mango Chia Seed Pudding

 Ok, so I know I said that my previous post was going to be my last one for a while, but this recipe is too good not to share.  I love chia seed pudding, but you can only mix almond milk with cinnamon or cocoa powder enough times before you get sick of it.  I decided to get creative and puree my mango that I had already sliced up to create a tropical chia pudding.  This would have been amazing if it was topped with some whipped coconut cream, but I didn’t have any coconut milk!  Next time…

This recipe is free of processed sugar, vegan, dairy, and gluten free.  So for any of you out there following strict diets this is fruity perfection.

Tropical Mango Chia Seed Pudding

Ingredients

  • Food processor or blender
  • 1 small mango
  • 1 cup unsweetened almond milk (or any milk of your choice)
  • 3 tbs chia seeds
  • Toppings for the pudding (banana slices, shredded coconut, whipped coconut cream, pineapple, etc)

Directions

  • Peel and chop the mango into small pieces
  • Add the mango pieces and almond milk to a food processor or blender, puree until there are no longer chunks of mango and the milk and fruit is well combined
  • Pour into a container and add chia seeds
  • Mix well and let the container sit for at least one hour or overnight
  • Top with whatever you want and enjoy!
