Pineapple BBQ Tacos

 When I think of some of my favorite types of food, Mexican is one of the first that comes to mind.  While I’m a huge fan of quesadillas, lately I’ve been really loving tacos because of all the possible combinations of savory meats and tasty toppings.  While I was home over break, I got the opportunity to use the Crockpot which I don’t have in my house at school.  Crockpots are great because they don’t require any work and are great for all types pulled meats.  While this taco recipe is more Caribbean styled, with a pineapple marinade, refreshing pineapple salsa, and creamy guac, it is definitely worthy of any Taco Tuesday.

Pineapple BBQ Tacos

Ingredients (For about 5-7)

  • 3 lbs boneless, skinless chicken breast
  • 1 1/2 cups unsweetened pineapple juice (just make sure there’s no sugar added, I used Dole)
  • 1/2 cup honey BBQ sauce
  • 3 cloves of minced garlic
  • 1 cup finely chopped pineapple
  • 1 Red onion
  • 1 Red pepper
  • Bunch of cilantro
  • 3 ripe avocados
  • 2 limes
  • Corn tortillas

Directions

For the Chicken

  • Whisk together the pineapple juice, BBQ sauce, and 2 cloves garlic
  • Place the chicken in the Crockpot, pour sauce over, and let cook on low for 7-8 hours
  • Once the chicken has cooked for about that time, the chicken should fall right apart and have that shredded look
  • If it does not come apart easily, shred with two forks
  • Place chicken, salsa, and guac onto a corn tortilla and boom!

For the Pineapple Salsa

  • Mince the red onion, about 1/4 cup, more or less depending on personal taste
  • Mince the red pepper, about 1/4 cup to 1/2 cup
  • Combine both with the finely chopped pineapple
  • Add in cilantro according to taste
  • Chill the pineapple salsa until the chicken is done

For the Guac

  • As you get closer to serving the meal, mash the 3 avocados
  • Cut one of the limes in half and squeeze into the guac
  • Add in 1 clove of minced garlic
  • Add in cilantro according to taste
  • I don’t add salt to my guac, but if you like it saltier add according to your taste!

I hope you enjoy these tacos as much as I did!  They’re so easy and perfect for a busy day when you don’t have time to cook.
