Dark Chocolate Espresso Cookies made with Coconut Flour

I’ve been dying to try baking with coconut flour, but never end up buying it at the supermarkets at school because it’s so expensive!  Now that I’m back at home for the week and have my local Trader Joe’s I can pop into, I can get coconut flour at an extremely reasonable price.  Because of the coconut flour, these cookies gluten free and also made with natural sugar.  They’re the perfect afternoon treat and are my favorite combo of dark chocolate and coffee.  Recipe below!

Ingredients

  • 1/2 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp instant coffee
  • 1 bar of 85% dark chocolate (I used Lindt)
  • 1/3 cup maple syrup
  • 1/2 cup unsweetened almond milk
  • 2 tsp vanilla
  • 1 egg
  • 1/4 cup coconut oil melted

Directions

  • Preheat oven to 350 degrees
  • Mix together dry ingredients, except for chocolate
  • Whisk together wet ingredients
  • Add wet ingredients to dry ingredients and mix well
  • Fold in dark chocolate chips
  • Form dough into small balls and place on baking sheet.  The dough won’t be as molded as normal cookie dough, but it should stick together enough that the balls stay together. Makes roughly 12 cookies.
  • Bake for 18-20 minutes or until a toothpick comes out clean.  Do not over bake because coconut flour can get dry very easily!
