Lemon Ginger Coconut Granola

The weather is starting to drop here in New Orleans and I’m starting to find myself craving warm, comforting foods.  This recipe is great because it not only tastes amazing, but the house will smell delicious and full of wintery spices.  My roommates often come scampering into the kitchen wondering what I’m making as the smell wafts through every corner of the house.

I also tried experimenting with Ziggy Marley Organics flavored coconut oil.  I got some free samples of the Lemon Ginger flavor, and safe to say I am a very satisfied customer and will be buying a lot more from this company.  The flavor is perfect for desserts, but could also be used in dozens of other recipes.

The recipe for the granola is below!

Ingredients

  • 3 cups rolled oats
  • 1 cup unsweetened, shredded coconut (sweetened works too for those who prefer it)
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp ginger
  • 1 cup of almonds (or any nut, I just used what was on hand)
  • 1/2 cup pure maple syrup
  • 1 packet or 2 tbs melted Ziggy Marley Organics Lemon Ginger Coconut Oil
  • 1/4 cup honey
  • 1/4 cup water
  • Any dry fruit that you might want to add

Directions

  • Preheat oven to 325
  • Combine all of the dry ingredients together in a bowl, except for the dried fruit if using
  • Add in wet ingredients
  • Stir well and distribute granola on a baking sheet
  • Bake for 30-40 minutes, or until light brown in color.  Stir occasionally on pan to make sure it’s evenly cooked
  • If adding dry fruit, add with 5-10 minutes remaining in baking time.  If you add the fruit too early, it tends to harden and be crunchy.
  • Wait for granola to cool and enjoy.  Perfect on top of yogurt, ice-cream, or in a trail mix!
