Kale and Tomato Baked Eggs

Have you ever had such a bad craving for eggs that they were literally all you thought about, all day long? Maybe I’m just crazy, and sometimes egg-obsessed, but the other day all I did was dream about eggs and couldn’t wait to get home and throw something together. I made this easy recipe for dinner, but they also work as the perfect brunch recipe. 

Ingredients

  • 1 can diced tomatoes
  • 1 cup kale
  • 2 eggs
  • Basil
  • Oregano
  • 2 tsp garlic

Directions

  • Preheat the oven to 325
  • In a small/medium skillet, sauté the kale over a low heat with the garlic and a splash of olive oil.
  • After the kale is soft, add in the diced tomatoes and a pinch of basil and oregano. I don’t measure, I just go by taste.
  • Let the sauce simmer for about 5 minutes.
  • Break the two eggs into the skillet and immediately transfer to the oven.
  • Bake for 10-12 minutes.
  • Enjoy!
