Homemade Edamame Spring Rolls

While at the supermarket the other day, I was browsing in the Asian foods aisle (my favorite aisle in the store) and came across Blue Dragon rice paper wrappers. I got really excited because I realized I could make my own spring rolls and that these would be a lower carb solution to bread and normal wraps. 

The beauty of these wraps is that you can fill them with anything and not go wrong. I just worked with what I had on hand, but any vegetables, meat, or fish will work. I dipped mine in a pre-made peanut sauce that I had sitting in the fridge. Soy sauce or any other homemade sauce would also serve as a great dipping option. Below is my recipe for the rolls I made, but like I said, any combination will work. For a crunchier roll, pan fry it in some coconut oil.

Ingredients

  •  2 Blue Dragon rice paper wrappers
  • 1 chicken breast cut into strips
  • 1/4 cup shelled edamame
  • Lemon pepper Mrs. Dash
  • 1/2 tsp minced garlic
  • 1 carrot, peeled intro shreds
  • 1/2 avocado
  • 2 radishes, sliced into thin sticks
  • Dipping sauce of choice, I used peanut

Directions

  • Thaw the frozen edamame.
  • In a food processor, mix the edamame, garlic, and Mrs. Dash until a chunky paste is formed.
  • Prepare the rice paper wrappers by running under warm water until pliable.
  • Place the wrapper on a cutting board and layer half of the edamame mixture, some carrot strips, radish pieces, some avocado, and some chicken pieces.
  • Fold in the sides of the wrapper and roll from the bottom up. Use a dash of water to seal the edge.
  • Repeat with the other wrapper and remaining ingredients.
  • Serve with the dipping sauce. Enjoy!
